An idea about our cuisine. Every day the Bistrots de Cuisiniers undertake to introduce variety in order to propose a real menu based on ingredients from the market of the day.
A few examples from this Bistrot :
- Lyonnaise salad : diced bacon, garlic croutons, poached egg - Chicken liver cake with a mild garlic cream - Chef’s pastry pie with calf sweetbreads and foie gras, salad - “Saint-Cochon du Bistrot”: small chitterling sausage, black pudding, spare ribs - Quenelles of pike, Nantua sauce (crayfish, cognac), rice - Rolled “traditional” calf head, Gribiche sauce (hardboiled eggs, capers) - “Gnafron” with rum (sponge cake, nougatine, crystallised fruit - Chef’s profiteroles with hot chocolate sauce
